This easy sheet pan dinner with baked chicken thighs, baby potatoes, and fresh green beans has become a favorite in many of your homes over the past two years.
This is such an easy dinner recipe and we make it at least once or twice a month. It only takes about 5 minutes effort to toss the chicken, potatoes, and green beans in a simple lemon and herb vinaigrette before being roasted until tender and crisp.
HOW TO BAKE CHICKEN
The ease of baked chicken is something that I don’t take for granted. When I was learning to cook, I must have looked up “how long to bake chicken” at least a hundred times. No joke. I finally wrote the average cooking times on the inside of my recipe notebook.

4-6 raw chicken breasts.
New potatoes.
Green beans.
Italian dressing mix.
1 stick of melted butter.
How to:
In a 9×13 baking dish, place the chicken, green beans and potatoes and sprinkle with the italian dressing mix. Pour the melted butter over the top.
Cover the baking dish with foil and bake in a preheated oven to 350° for 50 minutes.
Uncover and bake for 10 more minutes.
Easy, peasy and delicious! I usually make this when I have time and I store it in the fridge so that when I don’t have time to cook, I just take it out and through it in the oven and Voila!
