Toast comes in many forms, but this slow cooker banana pecan french toast has a whole new meaning for the term toast! It’s so easy to make, so fancy and most of all ridiculously delicious! The slow cooking makes it taste like heaven. Check how it’s made and give it a try.

Slow Cooker Banana Pecan french Toast

You’ll Need

12 (1″ thick) slices whole wheat baguette

4 eggs

3/4 cup almond milk

1 tablespoon coconut sugar

1 tablespoon vanilla

1 teaspoon cinnamon

2 tablespoons coconut oil, melted

2 bananas, sliced

1/2 lemon, freshly squeezed

1/2 chopped pecans

Nonstick cooking spray

Pure maple syrup (for serving)

How To

First, spray a 5-7 quart slow cooker with nonstick spray and place the baguette slices on the bottom.

In a bowl, mix the eggs, milk, coconut sugar, vanilla and cinnamon until combined. Add the mixture over the baguette slices. Make sure you cover all the baguette slices completely.

In another bowl, add the fresh lemon juice to the banana slices and toss to coat. Add the banana slices on top of the egg mixture and drizzle with melted coconut oil. Add pecans on top if you like.

Cook covered for 2 to 3 hours on high or 4 to 5 hours on low.

The cooking time may vary from a cooker to another so after 3 hours mark check your slow cooker and allow the toast to golden brown around the edges.

Add some pure maple syrup once the bread is ready.
