Spicy Chicken and Rice Skillet (Weight Watchers)


Ingredients Serves 4

1 tspolive oil
1 onion, finely chopped
12 green bell pepper, seeded and chopped
1 clove garlic, minced
2 tspcajun seasoning
1 tsp chili powder, or to taste
12 tspground cumin
13 cuplong grain brown rice
1 can(14 1/2 oz) stewed tomatoes
12 cupwater
1 cup chicken breast, cooked and shredded or chopped
4 black olives, sliced

  1. Heat olive oil in a medium nonstick skillet over medium high heat. Add onion, bell pepper, and garlic and cook, stirring frequently, until soft, about 8 minutes. Mix in cajun seasoning, chili powder, and cumin and cook for 1 minute. Add rice and stir constantly until the grains are coated, about 1 minute. Add tomatoes and water, then bring to a boil. Reduce heat, cover, and simmer for 40 minutes. Stir in chicken and olives, cover, and cook for 5 more minutes or until the rice is tender and the chicken is heated through.
