OATMEAL MUFFINS
Here’s what you’ll need:
1 banana
1 egg
1 teaspoon vanilla extract
½ cup almond milk
¼ cup maple syrup
½ cup Greek yogurt
1½ cups rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
Pinch of salt
Optional Toppings
Strawberries, sliced
Blueberries
Apples, sliced
Dark chocolate chips
Nuts, chopped
Dried cranberries
Here’s what you’ll do:
1.Preheat oven to 350˚F/180˚C.
2.Mash banana in a large bowl until smooth and mix in all wet ingredients. Stir in dry ingredients until thoroughly mixed.
3.Pour batter into greased muffin tin, filling each tin about ⅔ full.
4.Top each muffin with toppings.
5.Bake for about 30 minutes or until a toothpick comes out clean.
6.Enjoy!
EGG CUPS
Here’s what you’ll need:
5 eggs
Salt
Pepper
Mix and Match Fillings
Spinach
Tomatoes, diced
Broccoli, cut into small florets
Cheddar cheese, shredded
Bell peppers, diced
Onions, diced
Mushrooms, sliced
Asparagus, diced
Bacon, cooked and chopped
Here’s what you’ll do:
1.Preheat oven to 350˚F/180˚C.
2.Fill a greased muffin tin with your favorite combination of fillings or use the ones we did!
3.Whisk eggs in measuring cup and fill up each tin.
4.Sprinkle with salt and pepper.
5.Bake for about 30 minutes or until a toothpick comes out clean.
6.Enjoy!
YOGURY GRANOLA CUPS
Here’s what you’ll need:
1 banana
1½ cups rolled oats
¼ cup honey
1 teaspoon vanilla
1 teaspoon cinnamon
Pinch of salt
Filling Options
Greek yogurt
Strawberries. sliced
Blueberries
Mango, diced
Pineapple, diced
Kiwi, sliced
Banana, sliced
Dark chocolate chips
Here’s what you’ll do:
1.Mash banana in a large bowl and then add in the oats, honey, vanilla, cinnamon, and a pinch of salt.
2.Fill a greased muffin tin with the granola mixture and use a spoon to form the crust.
3.Let chill for 1 hour.
4.Preheat oven to 350˚F/180˚C and bake for 30 minutes. Let cool.
5.Add in Greek yogurt to each cup and fill with toppings.
6.Enjoy!
SWEET POTATO HASH CUPS
Here’s what you’ll need:
1 sweet potato, peeled
¼ cup panko
2 tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
Optional Toppings/Fillings
Broccoli, cut into small florets
Cheddar cheese, shredded
Onion, diced
Bell pepper, diced
Mozzarella cheese, shredded
Eggs
Bacon, chopped
Salt, to taste
Pepper, to taste
Here’s what you’ll do:
1.Preheat oven to 350˚F/180˚C.
2.Use a grater to shred sweet potato.
3.Add to a large bowl and mix with panko, olive oil, garlic powder, and salt.
4.Bake for 30 minutes or until golden brown.
5.Add in optional toppings/fillings.
6.For the bacon and egg hash cup, use a spoon to form a well in the sweet potatoes. Gently pour in egg and top with salt, pepper, and bacon.
7.Bake for an additional 10 minutes.
8.Enjoy!
