OATMEAL MUFFINS

Here’s what you’ll need:

1 banana

1 egg

1 teaspoon vanilla extract

½ cup almond milk

¼ cup maple syrup

½ cup Greek yogurt

1½ cups rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

Pinch of salt

Optional Toppings

Strawberries, sliced

Blueberries

Apples, sliced

Dark chocolate chips

Nuts, chopped

Dried cranberries

Here’s what you’ll do:

1.Preheat oven to 350˚F/180˚C.

2.Mash banana in a large bowl until smooth and mix in all wet ingredients. Stir in dry ingredients until thoroughly mixed.

3.Pour batter into greased muffin tin, filling each tin about ⅔ full.

4.Top each muffin with toppings.

5.Bake for about 30 minutes or until a toothpick comes out clean.

Here’s what you’ll need:

5 eggs

Salt

Pepper

Here’s what you’ll need:

1 banana

1½ cups rolled oats

¼ cup honey

1 teaspoon vanilla

1 teaspoon cinnamon

Here’s what you’ll need:

1 sweet potato, peeled

¼ cup panko

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon pepper

Broccoli, cut into small florets

Cheddar cheese, shredded

Onion, diced

Bell pepper, diced

Mozzarella cheese, shredded

Eggs

Bacon, chopped

Salt, to taste

Pepper, to taste

Here’s what you’ll do:

1.Preheat oven to 350˚F/180˚C.

2.Use a grater to shred sweet potato.

3.Add to a large bowl and mix with panko, olive oil, garlic powder, and salt.

4.Bake for 30 minutes or until golden brown.

5.Add in optional toppings/fillings.

6.For the bacon and egg hash cup, use a spoon to form a well in the sweet potatoes. Gently pour in egg and top with salt, pepper, and bacon.

7.Bake for an additional 10 minutes.
